GP10: Peppermint Pistachio Bark // Laicie of A Thousand Threads
Hi lovely Coco/Mingo readers! I'm Laicie, from the blog A Thousand Threads, and I'm so excited and honored to be here to share a recipe with you while Jessica is away.
Since the holidays are coming up, I thought I'd share a holiday treat that's easy to eat all by yourself (way too easy) or if you can part with it, to give as a gift!
One of my most prominent memories from holidays as kid is my Mom's annual cookie and candy-baking tradition - the kind that just has to be called an extravaganza. Some years she did an exchange, some years she invited friends and baked everything at once...but the result was always the same. A house full of sweet smells and holiday cheer.
Your family might have done this too? Maybe you even carry on the tradition (I always try to!)
And if you do, this recipe is one that you should add to your list. It's not too tough or time-consuming, it's festive, and most importantly, it really is good. . . .
Peppermint Pistachio Bark
// 20 oz high quality white chocolate (We used Lindt) // 1 6.5-ounce package red-and-white-striped hard peppermint candies // 1 cup salted and roasted pistachios
Line a large baking sheet with parchment paper.
Place peppermint candies in a plastic bag and crush with a mallet (or anything with a hard flat surface). Sift crushed candy to separate peppermint dust from hard candy pieces.
Melt chocolate in a double boiler (or a metal bowl over a boiling pot of water). When melted, mix in peppermint dust, then spread evenly over wax paper. Sprinkle hard candy pieces over the chocolate, then the pistachios, and tamp down a bit, just to make sure they’re embedded in the soft chocolate. Place in the refrigerator for 45 minutes or until firm.
Remove from refrigerator and break into pieces.
